ZUCCHINI CASSEROLE | |
1 lb. ground chuck 1/2 c. chopped onion 1/4 c. chopped green pepper Sprinkle of garlic salt 1/2 tsp. oregano 1/2 tsp. basil 1 sm. can tomato paste 2 c. chopped zucchini 2 c. diced potatoes Cook diced potatoes in salted water for 2 or 3 minutes to partly cook. Drain. Brown chuck and onion. When done, mix all ingredients with 1/4 cup water. It will be stiff and rather dry. Place in casserole. Cover with grated Cheddar cheese. Bake at 350 degrees for 45 minutes. |
