PIZZA CHICKEN 
1/3 c. butter
1 1/2 c. water
16 oz. can stewed tomatoes
1 box Betty Crocker scalloped potatoes
1 tsp. salt
1 tsp. oregano
8 pieces boneless chicken breast meat
2 oz. pepperoni, sliced
4 oz. grated Mozzarella cheese

Melt butter. In saucepan put water, tomatoes, potatoes and potato mix packet, salt and oregano. Stir and cover until mixture comes to a full boil; stir, boil for 3 minutes. Dip chicken in melted butter and place in pan. Spoon potato mixture around and over chicken. Cover with foil and bake 15 minutes. Remove foil and bake for 45-50 minutes more. Top with pepperoni and cheese and put back into oven until cheese is melted. Bake at 350 degrees in a 9 x 13-inch pan. Serves 8. Chicken may be left in eight individual pieces or cut into bite size pieces.
