GOOD AND EASY HOT DISH 
1 lb. lean ground beef
1/2 c. (1 med.) chopped onion
1/2 c. (1 sm.) chopped green pepper
1/2 c. (1 med. stalk) chopped celery (if desired)
1 1/2 c. (3 med.) cut up carrots
1/2 c. whole kernel corn
1/2 c. uncooked reg. rice
1 (16 oz.) can tomatoes
1/2 c. water
1 1/2 tsp. salt
1/4 tsp. pepper
Canned or frozen peas (if desired)

Brown meat, onion, green pepper, and celery in skillet. Combine with remaining ingredients in ungreased 2 1/2 to 3 quart casserole dish. Bake at 350 degrees for 1 to 1 1/2 hours, stirring occasionally.
