HEARTY VEGETABLE SOUP 
1 - 1 1/2 lb. chuck roast or similar
28 oz. can tomato sauce
2 (28 oz.) cans tomatoes
1 med. onion
2 bags frozen mixed vegetables
10 oz. box frozen baby lima beans
10 oz. box frozen corn
4 med. potatoes
1 lb. frozen or homemade egg noodles
Water
Salt
Pepper

Brow n roast in large soup pot. Add 3 cups water, tomato sauce and tomatoes (break up tomatoes with spoon or puree in blender). Simmer several hours until meat is tender.

Add frozen vegetables and simmer for another hour. Remove meat to cool. Add cubed potatoes and egg noodles to simmer while shredding meat. When noodles and potatoes are tender, add shredded meat. Salt and pepper to taste.
