ORANGE ZUCCHINI CAKE 
1 c. flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1/2 tsp. ground nutmeg
1/2 c. vegetable oil
3/4 c. sugar
1/2 c. all bran cereal
1 1/2 tsp. grated orange peel
1 tsp. vanilla
1 c. grated zucchini, peeled well drained
1/2 c. walnuts, optional
Orange Frosting

Mix flour, baking powder, soda, salt, ground cinnamon and nutmeg together. Mix sugar, oil and eggs together add to first mixture. Add all bran, grated orange peel, vanilla, and the zucchini, well drained, add nuts. Bake 350 degrees in greased and floured 8 inch square pan 35 minutes. Or double recipe and bake in a bundt pan about 50 minutes or until done.

Frosting: Mix 1 (3 oz.) cream cheese, 1 tablespoon butter, add 1 teaspoon grated orange rind and 1 1/2 cups powdered sugar. Spread on cooled cake.
