MICHELLE'S OATMEAL-PUMPKIN SEED
COOKIES
 
Great fall treat!

1 cup shortening (oil or unsalted butter)
1 cup granulated sugar
1 cup light brown sugar
2 eggs
1 tsp. vanilla extract
2 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
3 cups uncooked oats
1/2 cup pumpkin seeds

Cream butter or oil and sugars, beat in eggs, one at a time. Stir in vanilla extract. Combine dry ingredients and stir slowly into mix, now stir in oats and pumpkin seeds. Cover and chill 1 hour.

Preheat oven to 375°F. Spray cookie sheet with baking spray and bake for 8 to 10 minutes. Cool on wire rack.
