HUSH PUPPIES 
1 2/3 c. yellow cornmeal
1/3 c. flour
2 tsp. baking powder
1 tsp. salt
1/2 c. milk
2 eggs, well beaten
1/2 c. water
1 lg. onion, minced or grated

Sift together the cornmeal, flour, baking powder and salt. Add the milk and water. Stir in the eggs and onion. Add more milk if necessary to form a soft but workable dough. Mold tablespoons of dough into 1 1/2 to 2 inch balls. Fry in about 1 inch of hot melted lard until well browned, about 2 minutes on each side. Drain on paper towels and serve hot. Makes 8 to 10 hush puppies.
