CUCUMBER SALAD 
Make a marinade by mixing together one part water, two parts vinegar, salt, pepper and sugar to taste. Rinse a large, firm, green cucumber - do not peel it - and cut or shred it into thin slices. Lay the slices in a dish and pour the marinade over them. After 2-4 hours the cucumber salad will be ready. Remember that the quantity of marinade should be just enough to cover the cucumber slices.
