SPANISH RICE 
1 med. can tomatoes
1 1/2 c. cooked Minute Rice
3/4 lb. store cheese, grated
6 slices crisp cooked bacon
1/2 green pepper, diced
1 sm. onion, diced
Pepper and cracker crumbs
(Seasoning)

Fry bacon. Saute diced pepper and diced onion in small amount of bacon fat. Mix tomatoes, cooked rice, most of the grated cheese and bacon, peppers and onion in medium casserole dish. Top with remainder of grated cheese plus cracker crumbs and pepper seasoning. Dot with butter. Bake at 375 degrees for 1 hour. Serves 4.
