SPICY TURKEY TACOS 
1 lb. ground turkey
3 c. V-8 juice
1 onion (chopped fine)
2 cloves garlic, minced
1 tsp. salt
1 tsp. pepper
2 tbsp. chili powder
2 tbsp. ground cumin
2 tbsp. chopped fresh cilantro

2 c. grated Cheddar cheese 2 c. shredded lettuce 1 chopped tomato

Place a skillet over medium high heat. Combine the filling ingredients and stir until mixture comes to a boil. Continue cooking for 15 minutes, or until most of the liquid is gone.

Fry tortillas in hot oil, one at a time until crisp. Fold in half.

Place a spoonful of filling in each tortilla, a little cheese, lettuce and tomato. Eat and enjoy! Makes 12 tacos.
