POTATO SPINACH CASSEROLE | |
6 to 8 potatoes, cooked and mashed 2 tsp. salt 2 tbsp. chopped chives or green onion tops 1 (1 oz.) pkg. frozen chopped spinach 1 c. sour cream 1/4 tsp. pepper 1/4 c. butter 1 c. shredded Cheddar cheese Mix all ingredients, except cheese. Spoon into greased 2 quart casserole. Bake at 400 degrees uncovered 15 minutes. Top with cheese and bake 5 more minutes. 6-8 servings. |
