SPINACH AND POTATO CASSEROLE 
1 pkg. frozen chopped spinach
6 lg. potatoes
2 tbsp. chopped onions
1/4 tsp. dill
1/4 lb. melted butter
1 c. sour cream
Grated cheddar cheese

Cook and drain spinach according to package. Cook and mash potatoes, adding butter, sour cream, dill, onion, spinach, and salt and pepper to taste. Stir in approximately 1 cup grated cheddar cheese and mix until cheese melts. Put in casserole and add additional cheddar cheese on top. Bake for 20 to 25 minutes until heated through at 350 degrees. This may be made the day before and refrigerated.
