BROWNIE COOKIES | |
This cookie can be rolled out and cut into shapes or be baked on cookie sheet then crushed and sued in recipe that calls for crushed chocolate wafer cookies. 1/3 c. cocoa powder 4 tbsp. vegetable shortening 3 tbsp. semi-sweet chocolate chips 2 1/3 c. flour 1 1/2 tsp. baking soda 1/2 tsp. baking powder 1 stick butter (1/2 c.) 1 c. sugar 1 tsp. vanilla 2 eggs 1 tbsp. milk Melt chocolate. Set aside. Sift the flour, baking soda and baking powder together. Set aside. In bowl cream the butter. Add sugar slowly and continue to beat. Add vanilla and eggs, one at a time. Add chocolate and stir to blend. Stir in dry ingredients and milk by hand. When just blended cover and refrigerate 30 minutes. Roll dough out on well floured surface. When 1/4 inch thick cut into desired shapes. Reroll scraps and cut again. Place on cookie sheet. Bake 6-8 minutes in preheated 375 degree oven. Don't let these over brown. To use as wafer cookie crumbs chill dough. Chill briefly lightly grease large baking sheet or several small ones. Roll out as thin as possible so that will crumble easily when baked. Bake at 375 degrees for 5-7 minutes. |
