BROCCOLI PUFF 
2 pkg. (10 oz.) frozen chopped broccoli
1 c. Bisquick baking mix
1 c. skim milk
2 eggs
1/2 tsp. salt
1 c. shredded reduced-fat Cheddar cheese

Heat oven to 325°F. Spray a 1 1/2-quart casserole or 5 1/2-cup souffle dish with cooking spray. Cook broccoli as directed on package; drain. Beat baking mix, milk, eggs and salt until smooth. Stir in broccoli and cheese. Pour into dish/casserole.

Bake 1 hour.

Makes 6 servings.
