BRANDY CREAM SAUCE 
5/8 c. brandy
1 can beef stock
5/8 c. heavy cream
1/4 c. butter

Put brandy in saucepan. Light brandy, shake over medium heat until flame goes out (about 4-5 minutes). Add stock. Add cream. Cook over medium heat until reduced to half. Add butter. Pour over grilled, sliced beef, pork, etc.
