CHICKEN CASSEROLE 
2 c. diced chicken, cooked
1 1/2 c. cooked rice
1 c. diced celery
1 can cream of chicken soup
2 tsp. grated onion
1/2 tsp. salt
1/4 tsp. pepper
1 tbsp. lemon juice
1/4 c. water
3/4 c. mayonnaise (not salad dressing)
1/2 c. bread crumbs (optional)
Slivered almonds (optional)
1 c. Cheddar cheese

Mix chicken, rice, celery, soup, onion, salt, pepper and lemon juice together in a large bowl. In a small bowl mix water and mayonnaise until creamy. Add mayonnaise mixture to chicken mixture and mix well with a spoon.

Spoon chicken casserole into a 9 x 13 inch pan. Top with 1/2 cup bread crumbs (optional) and sprinkle with slivered almonds (optional) or shredded Cheddar cheese. Bake at 375 degrees for 30-40 minutes.
