TUNA FLORENTINE 
1 sm. pkg. frozen, chopped spinach
2 (6 1/2 oz.) cans tuna, packed in oil
3 tbsp. flour
1/2 tsp. salt
1 1/2 c. milk
1/2 c. grated Swiss cheese
1/2 c. light cream or milk
1/8 tsp. cayenne pepper
1/2 c. bread crumbs
2 tbsp. melted butter

Cook spinach according to package directions and drain. Drain tuna and reserve oil.

Make cream sauce as follows: Mix flour and salt with 1 1/2 cups milk. Heat, stirring constantly, until mixture thickens. Remove from heat and stir in 1/2 cup grated Swiss cheese, light cream, cayenne pepper, and oil reserved from tuna.

In a 2-quart casserole, alternate layers of spinach, tuna and cream sauce. Top with bread crumbs tossed in melted butter. Bake at 350 degrees for 25-30 minutes. Broil just long enough to brown top as desired. Serves 4-6.

My children loved this, and nicknamed it Tooney Fazoo.
