FIESTA FAJITAS | |
1 env. onion soup mix 1/4 c. oil 1/4 c. fresh lime juice, about 2 limes 1/4 c. water 2 med. cloves garlic, finely chopped 1 tsp. grated lime peel 1 tsp. ground cumin 1/2 tsp. oregano 1/4 tsp. ground pepper 1 lb. boneless flank steak or chicken breast Warm flour tortillas In large shallow glass baking dish, combine onion soup mix, oil, lime juice, water, garlic, lime peel, cumin, oregano and pepper. Add steak or chicken and turn to coat. Cover and marinate in refrigerator, turning occasionally, 4 hours or overnight. Remove steak or chicken from marinade, reserving marinade. Grill about 5 inches from heat for 10 minutes or until done, turning once and brushing with marinade. Thinly slice meat diagonally, then serve in tortillas and top, if desired, with salsa and sour cream. Makes about 4 servings. |
