WATERMELON PRESERVES 
1/2 lb. peeled rind
1/2 c. water
1/2 c. sugar
2 tbsp lemon juice

Cook rind in water to cover until tender. Drain. Make syrup of water and sugar. Add rind and lemon juice. Cook until clear. If possible add a couple of slices of lemon, also if you like ginger root, add a little.
