MOTHERDEAR'S WATERMELON PRESERVES | |
My grandmother, called Motherdear by all her grand and great grandchildren, made these every year from melons she grew in north Florida. No family party was "official" without them. Remove ALL green and pink melon and slice the white rind into small, thin pieces. Make a solution of: 1 gal. water Soak the rind overnight in a glass or crockery bowl. Add more water if necessary to cover rind. Next morning wash thoroughly, cover with cold water and bring to a boil, boil ten minutes. Wash again and bring to a boil and boil until rind can be pierced easily with a broom straw or toothpick. Drain, add sugar pound for pound (five pounds for a big melon is about right), stick cinnamon, whole cloves, ginger and sliced lime and boil until syrup is thick, about 1 1/2 hours. Pour into hot jars and seal with paraffin. (Motherdear always added a few drops of red food coloring to be sure it looked watermelonish.) |
