N.W. FLORIDA WATERMELON
PRESERVES
 
1/2 gallon cut (1/2 x 1 1/2) watermelon rind
1 lb. sugar
4 to 5 cinnamon sticks
1 tbsp. cloves
Water to cover
6 to 8 sterilized fruit jars and lids

Cut rind in 1/2 x 3 inch strips. Remove all green and pink color so firm white fruit remains. Cut strip in half.

Blanch fruit. Drain. In large enamel pot, layer fruit, then sugar. Bring to boil. Let simmer 1 1/2 to 2 hours. Add water if needed. When fruit is "clarified" spoon into jars and seal.
