OATMEAL COCONUT ICEBOX COOKIES 
1 c. brown sugar
1 c. white sugar
1 c. shortening
2 eggs
1/2 tsp. salt
1 tsp. baking soda
1 tsp. vanilla
2 c. flour
2 c. quick oatmeal
1 c. coconut

Mix and beat in order given, through the flour. Stir in oatmeal and coconut last. Form into two long rolls. Refrigerate overnight. Slice thinly and bake on greased cookie sheet at 350 degrees until lightly browned.
