SHREDDED CARROT & RAISIN SALAD 
1 (16 oz.) pkg. carrots, peeled
1/2 c. raisins
1/3 c. mayonnaise
1 to 2 tbsp. sugar (to taste)
1/2 tsp. salt

Grate carrots in food processor fitted with grating blade or on coarsest side of hand grater to make about 2 cups; toss in large bowl with raisins, mayonnaise, sugar and salt. Refrigerate at least 1 hour until serving time. Yield: 4 to 6 servings.
