EGGPLANT CASSEROLE 
2 lg. eggplants, scalloped
2 med. onions, cut in rings
2 med. bell peppers, cut in rings
1 c. pitted ripe olives, cut up
1 c. grated sharp cheese
1 c. soft bread crumbs
1 can Ro-Tel tomatoes

Place in greased casserole. Make 2 layers. Then add your soft bread crumbs and tomatoes. Bake at 350 degrees for 1 hour. Don't cover.
