LEMON CHICKEN 
4 chicken breasts, skinned
2 lemons
1 tsp. dried tarragon
Fresh black pepper to taste

Remove all visible fat from chicken. Place chicken breast in center of a 12x2 inch pan. Halve the lemons and squeeze over chicken. Sprinkle with tarragon and pepper. Fold aluminum foil over pan.

Place in oven at 350 degrees for 40 minutes. Makes 4 servings, only 166 calories each.
