PIZZA MUFFINS 
6 tbsp. olive oil
1/4 c. finely chopped onion
1 clove garlic, minced
1 c. tomato juice
1 egg, beaten
2 c. flour
2 3/4 tsp. baking powder
3/4 tsp. salt
1 tsp. dried oregano leaves
1 c. finely diced Mozzarella cheese
1/4 c. finely diced pepperoni
1/2 c. grated Parmesan or Romano cheese

In 2 tablespoons of oil, saute the onion and garlic until soft. In a bowl, mix the sauteed mixture with the tomato juice and egg.

In another bowl, combine the flour, baking powder, salt, oregano, Mozzarella cheese and pepperoni. Quickly stir wet ingredients into dry ingredients until just moistened. Spoon into oiled muffin cups. Sprinkle with grated cheese. Bake at 400 degrees for 20 minutes. Serve hot from oven or reheat.
