TARTAR SAUCE FOR A CROWD 
Mayonnaise:

1 chef spoon of Dijon mustard
20 eggs
vegetable oil

Tartar Ingredients:

1 cup gherkins
1 cup capers
4 Spanish onions, finely chopped
half can sweetened condensed milk

Add eggs and Dijon mustard to a stainless bowl or 20L bucket, use the stick blender to blitz, slowly add oil whilst blitzing. Set aside.

In the food processor, add gherkins, capers, Spanish onions; blitz until fine with condensed milk. Stir through the mayonnaise mixture.

This is a commercial recipe and will make a large quantity.
