PEAR NUT BREAD | |
2-3 fresh pears 1/2 c. vegetable oil 1 c. sugar 2 eggs 1/4 c. sour cream 1 tsp. vanilla 2 c. sifted flour 1 tsp. baking soda 1/4 tsp. ground cinnamon 1/4 tsp. ground nutmeg Chopped walnuts or pecans Pare, halve and core pears. Coarsely chop to get 1 1/2 cups of fruit. In large bowl of electric mixer, beat together oil and sugar until well blended. Beat in eggs, sour cream and vanilla. Sift together flour, baking soda, cinnamon and nutmeg. Add to oil and sugar mixture. Beat well. Add nuts and pears. Mix with a wooden spoon. Grease 1 (9x5 inch) loaf pan. Bake at 350 degrees for 1 hour and 10 minutes or until pick comes out clean. Cool on rack. Flavor improves on standing. |
