NEW YORK STYLE CHEESECAKE 
1 pkg. graham crackers
1/4 c. sugar
1/3 c. butter

CHEESECAKE:

3 lg. (8 oz.) cream cheese
1 1/2 pt. sour cream
5 eggs
1 c. sugar
2 tsp. vanilla

Before you start, everything at room temperature. Use spring pan.

Graham Cracker Crust: Crush graham crackers. Butter pan all around. Right in pan mix crushed crackers with sugar and butter, flatten into bottom.

Cheesecake: Beat cream cheese. Add sugar, a little at a time; blend well. Add eggs, a little at a time. Add vanilla. With spatula fold in sour cream. Mix until creamy smooth. Bake at 375 degrees for 45 minutes. Shut oven off and leave in closed oven for 1 hour. Put pan of water in oven to avoid cracking.

I saved this recipe several years ago and it is my go-to cheesecake recipe. It is absolutely delicious! Note: the 1 pkg of graham crackers it calls for was confusing for me. I used one and one-half of the little packages of graham crackers inside the large box of graham crackers. This is a very creamy cheesecake, that melts in your mouth. It is firm after refrigerating overnight, which I recommend. People rave about this cheesecake everywhere I take it! I have served it with cherry pie filling topping and triple berry sauce topping as well. Both were excellent. Enjoy!
