CHOCOLATE LIME SWIRL (LIGHT &
FLUFFY)
 
1 box (25 to 30) chocolate wafer cookies, crushed
3 tbsp. butter, melted
1 (3 oz.) pkg. lime Jello
1/2 c. hot water
1/4 c. lemon juice
1 can Carnation milk, chilled in freezer to ice-crystal stage
1 tsp. grated lemon rind (optional)
4 drops green food coloring

Dissolve Jello in hot water. Add lemon juice and sugar. Let cool while whipping milk to a stiff froth. Add Jello mixture to whipped milk. Continue whipping until stiff peaks are formed. Whip in food coloring and lemon rind. Combine butter and cookie crumbs. Cover bottom of 3 quart flat bottom bowl with cookie mixture. Pour half of Jello mixture over cookies. Repeat layers. Top with cookies. Chill 4 hours.
