AUNT VIOLET'S KUGEL | |
10 med. potatoes 1 stick butter 1 onion, chopped 2 c. milk 1 tsp. salt 6 eggs, beaten 3 tbsp. Farina or Cream of Wheat Peel potatoes and set aside. Melt butter in a saucepan. Saute onion. Add milk and bring to a boil. While milk is heating, grate the potatoes into a bowl. (Keep your eye on the milk as it heats.) Pour hot milk mixture over potatoes immediately to keep them from turning black. Add salt, Farina or Cream of Wheat and beaten eggs. Pour into a greased square or oblong pan. Bake at 375 degrees for 1 hour or until done. Serve with butter or sour cream. This dish is especially tasty when, fried to reheat, the next day. |
