ORANGE-GLAZED CHICKEN BREASTS 
2 lg. boneless, skinned chicken breasts
1/2 c. orange marmalade
2 tbsp. Dijon style mustard
1 tbsp. soy sauce
2 garlic cloves, pressed (optional)
1 navel orange
Fresh parsley

Preheat oven to 350 degrees.

Spray a 10x8 inch baking pan with nonstick cooking spray and set aside. Rinse and dry the chicken breasts. Remove all visible fat and cut each breast in half.

In a medium-sized bowl, mix the orange marmalade, mustard, soy sauce and garlic. Dip the chicken pieces in the sauce and arrange in the baking pan. Spoon the remaining mixture over the chicken and bake uncovered for 35 minutes.

Remove to a serving platter (slice if desired) and garnish with slices of orange and parsley. Serve immediately.

The second time I made this I added 2 tablespoons of rice wine vinegar - cut garlic to one clove . . . . used chicken tenders . . . sooo good and easy.

In my rush to get dinner on the table, I doubled the orange marmalade, but it was a happy accident, and the results were wonderful! I did reduce the garlic and add the vinegar as Linda suggested, and I'm glad I did. This was an easy dish to pop in the oven, and the results were spectacular. Everybody agrees that this recipe is a keeper!
