ISLAND GLAZED CHICKEN 
1 c. pineapple juice
1/2 c. honey
2 tbsp. soy sauce
2 tbsp. vegetable oil
1 tsp. grated orange rind
1 tbsp. cornstarch
1/2 tsp. ground ginger
1/4 tsp. dry mustard
3 to 4 lbs. broiler chicken, split

Combine pineapple juice, honey, soy sauce, oil, orange rind, ginger, mustard and cornstarch in small saucepan. Heat to boiling, stirring constantly. Cook until thickens. Place chicken breast side up. roast uncovered in 375 degree oven, brushing with glaze.
