VEGETABLE STEW 
1 c. chopped onion
2 tsp. oil
1 (17 oz.) can Del Monte sweet peas (no salt added)
1 (14 1/2 oz.) can Del Monte Original style stewed tomatoes (no salt added)
1 med. red potato, cut into cubes
1 c. chopped green pepper
1/2 tsp. salt-free herb and spice seasoning

In skillet, cook onion in oil until tender. Drain peas, reserving liquid. Add reserved liquid, tomatoes, potato, green pepper and herb and spice seasoning to skillet.

Cover and cook over high heat 5 minutes. Uncover and continue cooking 10 minutes or until potato is tender. Reduce heat and add peas; heat through. Yields 6 servings.
