AUBERGINE MOUSAKA 
1 aubergine (eggplant)
1 boiled potato
1 clove chopped garlic
1 stalk chopped celery
grated cheese
salt, sugar (to taste)
1 beaten egg

Cut into centre the aubergine then remove the seeds. Mash the potato and add garlic, celery, cheese, salt and sugar. Mix well the ingredients and stuff into the aubergine and brush with egg yolk. Deep fry in hot oil. Make white sauce and pour into the aubergine.

Finally, sprinkle top with grated cheese and broil until top is golden and cheese is bubbly.
