SWEDISH RYE BREAD | |
2 1/2 c. rye graham or plain rye flour 2/3 c. brown sugar 1 tbsp. salt 4 c. boiling water 2-3 tbsp. molasses or sorghum 2 pkg. yeast in 1/4 c. water White flour Pour 4 cups boiling water into rye flour. Add brown sugar and salt. Mix well and add molasses. Dissolve yeast in 1/4 cup warm water and stir into batter. Stir in some white flour to make stiff dough. Let set 10 minutes. Knead. Put in greased bowl and cover with clean cloth. Rise to double then rise a second time. Knead and make 3 loaves. Let rise to double. Bake at 375 degrees for 15 minutes. Then 350 degrees for 35 minutes. Tap and if hollow turn out on rack. Grease, cover with cloth and wrap cold wrap well. |
