STIR FRY CHICKEN 
Fresh ginger, 6 thin slices
1 tbsp. brown sugar
1 tbsp. cooking sherry
1 tbsp. soy sauce
1 lb. chicken, diced, no skins and no bones
1-2 tbsp. oil
6 green onions, sliced
2 carrots, sliced
1/2 lb. mushrooms, sliced
Any other vegetables
Cooked white or brown rice

Combine ginger, brown sugar, sherry, soy and chicken; marinate 1 hour.

Heat oil in wok or frying pan. Add marinated chicken, cook quickly until done. Remove chicken. Add carrot, cook 1 minute. Add mushrooms, cook until done. Add green onions and chicken, stir until warm. Serve over rice.
