FRESH APPLE CAKE 
1 c. salad oil
3 eggs
1 3/4 c. sugar
1 tsp. vanilla
2 c. plain flour
1 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1 tsp. baking powder
4 c. chopped apples
1 c. chopped walnuts or pecans
6 oz. butterscotch chips

Mix eggs, oil and sugar in large bowl. Mix all other dry ingredients and then add to egg mixture and mix well. Fold in nuts and apples (mixture will be thick).

Spread in 9x13x2 inch greased and floured pan. Sprinkle chips on top. Bake at 350 degrees for 35 minutes.
