COLE SLAW 
1 head cabbage, chopped fine
2 tbsp. sugar
1 med. onion, chopped
1/2 bell pepper, chopped
1 med. tomato, peeled and diced
Salt and pepper
2-3 tbsp. mayonnaise
1/8 tsp. lemon juice

Work chopped cabbage with sugar using fingers; cabbage will take on a softer more supple feel (this cuts the acid greatly). Add onion, bell pepper, tomato and salt and pepper. Mix well. Add mayonnaise and lemon juice and fold in well. Can be eaten immediately or allowing to stay in refrigerator overnight in covered container will enhance flavor.
