CHEESE PIEROGI 
2 eggs
1/2 c. water
2 c. flour
1/2 tsp. salt

FILLING:

2 c. Farmers cheese
1 tbsp. sugar
1 beaten egg
1 tsp. melted butter

Mound flour on table and make hole in center. Drop eggs into center and cut into flour with knife. Add salt and water and knead until somewhat firm. Allow to rest for 5 minutes in warm bowl. Cut dough into quarters, roll out one section fairly thin, cut into desired circle size.

Place tablespoon cheese mixture in center, fold over and pinch edges.

Drop into salted boiling water and cook until they float to top (5-8 minutes). Use wooden spoon. Spoon over melted butter.

Preparation time: 10 minutes. Serves 8.
