TEXAS POTATOES 
2 lb. pkg. frozen hash brown potatoes
1/2 c. diced onion
1/2 c. melted butter
1/2 tsp. pepper and salt
1 can cream of mushroom soup or cream of chicken soup
1 c. sour cream
1 c. grated sharp Cheddar cheese

Mix all together. Bake at 350 degrees for 45 minutes to 1 hour. Cover towards end of baking with mixture of 2 tablespoons butter and 3/4 cup crushed corn flakes.
