SPICY SUGARED NUTS 
3 c. walnuts or pecans
1 c. sugar
1/2 tsp. salt
1/2 c. water
1 tsp. cinnamon
1 tsp. vanilla

Heat walnuts or pecans at 375 degrees for 5 minutes. Keep warm. Butter sides of 2 quart saucepan and add sugar, salt, water and cinnamon. Stir until sugar is dissolved, then bring to a boil on medium heat. Cook to a soft ball stage or 230 degrees.

Remove from heat and beat until creamy. Add vanilla and nuts. Stir gently until nuts are coated. Turn out on buttered platter and separate with 2 forks.
