SCALLOPED POTATOES IN CHEESE
SAUCE
 
6 potatoes, sliced
1 onion, chopped
2 tsp. salt
Pepper
2 tbsp. butter
2 tbsp. flour
2 c. hot milk
1 c. grated cheese
Parsley flakes

Melt butter in double boiler or saucepan. Add flour, seasoning, and stir smooth. Slowly add the hot milk, stirring constantly. When it thickens melt the cheese in the sauce. Into a buttered baking dish or casserole put layers of slices potatoes, onions, and cheese sauce, repeating until all ingredients are used. Sprinkle parsley flakes on top. Bake 1 hour at 350 degrees. Serves 6.
