SCALLOPED POTATOES IN CHEESE
SAUCE
 
6 potatoes, sliced
1 onion, chopped
2 tsp. salt
Pepper
3 tbsp. butter
2 tbsp. flour
2 c. hot milk
1 c. grated cheese
Parsley flakes

Melt butter in double boiler or saucepan. Add flour, seasoning and stir smooth. Slowly add the hot milk, stirring constantly. When it thickens, melt the grated cheese in the sauce.

Into a buttered baking dish or casserole, put layers of sliced potatoes, onions and cheese sauce, repeating until all ingredients are used. Sprinkle parsley on top. Bake 1 hour at 350 degrees. Serves 6.

I have never made scalloped potatoes before, and these are definitely the best I have ever tasted. Everybody loved them! I had to cook them an extra 12 minutes; perfection!!
