BEET RELISH 
1 qt. chopped cooked beets
1 qt. chopped raw cabbage
2 c. sugar
1 tbsp. grated horseradish
1 tbsp. salt
1 tsp. pepper
1/2 c. vinegar

Combine beets, cabbage, sugar, horseradish, salt and pepper. Pack into sterile jars and add 2 tablespoons vinegar to each pint. Store in dark place. Makes 4 pints.
