2 1/2 c. whole wheat flour
2 tsp. baking soda
1 3/4 c. safflower oil
2 c. white sugar
2 c. brown sugar
4 eggs or 1 container Egg Beaters
2 tsp. vanilla
6 c. quick cooking oats
1 (12 oz.) pkg. semi-sweet chocolate pieces
1 c. chopped nuts (optional)

Stir together flour and soda. In mixer bowl beat oil and sugars until fluffy. Add eggs and vanilla, beat well. Add dry ingredients to mixture and beat until well blended. Stir in oats, chocolate pieces and nuts. Drop from teaspoon 2 inches apart on ungreased cookie sheet. Bake at 375 degrees for 8-10 minutes until done. Makes about 12 dozen.
