TAMALE PIE 
1 1/2 lb. ground beef
1/4 c. olive oil
1 c. garlic clove OR
1 tsp. garlic powder
1/2 c. chopped green pepper
2 1/2 c. tomatoes
2 c. whole corn
1 tbsp. salt
1 1/2 tbsp. chili powder
1/4 tsp. black pepper
1/2 c. corn meal
1 c. water
1 c. chopped olives

Brown beef in oil. Add onion, garlic, and cook. Stir until vegetables appear wilted. Stir in tomatoes, corn, salt, chili powder and pepper; simmer about 5 minutes.

Mix corn meal and water; stir into mixture and cook slowly for 10 minutes. Stir in olives and turn into 2-quart dish. Cover with cheese topping and bake in 375 degree oven for 20 minutes.

CHEESE TOPPING:

1 1/2 c. milk
1/2 c. corn meal
1 tsp. salt
2 tbsp. butter
2 eggs
1 c. grated cheddar cheese

Heat milk, salt, and butter until butter melts. Add corn meal and stir until thickened.

Remove from heat; stir in cheese and lightly beaten eggs. Pour over tamale mixture. Bake at 375 degrees for 20 minutes.
