SKILLET SQUASH | |
1 tbsp. salad oil 3 c. sliced yellow summer squash 3 c. sliced zucchini squash 1 tsp. salt 1/4 tsp. pepper 1/4 c. water Heat salad oil in large fry pan; add sliced squash and saute, stirring lightly, for about 3 minutes, or until slices are moist. Sprinkle with salt and pepper and pour water over. Cover and steam over medium-low heat for about 10 minutes, or just until crisply tender. |
