SPICE NUT CAKE 
2 1/3 c. sifted flour
1 c. sugar
1 tsp. baking soda
1 tsp. salt
1 1/2 tsp. cinnamon
3/4 tsp. nutmeg
3/4 tsp. cloves
1 c. brown sugar, packed
2/3 c. shortening (butter flavored Crisco)
1 c. buttermilk

Preheat oven to 350°F.

Combine flour, sugar, baking soda, salt, cinnamon, nutmeg and cloves. Add brown sugar, non hydrogenated vegetable shortening (any kind) and buttermilk. Beat vigorously with a wooden spoon for 2 or 3 minutes (150 strokes per minute) or use an electric hand mixer for 1 minute.

Add 1/2 to 2/3 cup unbeaten eggs (about 3). Continue beating 2 more minutes (hand) or 30 seconds more for electric mixer. Fold in 1/2 cup chopped nuts, 1/2 cup chopped raisins.

Pour batter into greased pans.

Bake layers for 30-35 minutes, or oblong loaf pans for 45 minutes.
