LEMON CHICKEN | |
4 chicken breasts, skin removed Pepper to taste 1 tbsp. vegetable oil 1 bunch scallions, chopped 1 tsp. onion powder 1 tbsp. grated lemon peel 1 tbsp. flour 1/2 c. chicken broth 1/4 c. dry white wine 1 tbsp. light soy sauce Pepper the chicken breasts. Saute in the oil, 5 minutes on each side. Remove chicken from the pan. Lower flame and add scallions, onion powder, lemon peel and flour, stir well. Turn up the flame. Add the broth, wine and soy sauce. Blend well and return chicken to the pan. Lower the heat and simmer 15-20 minutes. Makes 4 servings. |
